With over 20 years of researching regional cuisines throughout Spain, and as co-owner of Viridian Farms LLC, Manuel has had the opportunity to supply some of the nation’s best restaurants with specialty foods from the Iberian peninsula. In 2013 he became a professional Cortador de Jamón, and having undergone training from esteemed instructors in Spain, Manuel possesses considerable expertise in the carving techniques and presentation of jamón ibérico.

Selected by the Embassy of Spain’s trade commission for several special affairs, Manuel has delivered programs showcasing Spain’s artisanal ibérico at notable institutions including the Culinary Institute of America, the Institute for Culinary Education, and the Instituto Cervantes.  Additional significant engagements include representing top ibérico producers at events with Spanish chefs José Andrés and Albert Adrià, as well as OLE San Antonio, StarChefs Awards Gala, LA RUTA PDX, World Tapas Day, and Pebble Beach Food & Wine.
