Emily Phillips grew up making homemade ice cream with her mom and sisters in the summers. After ten years as a chef, including several years in New Zealand, she decided to combine her culinary expertise with her love of locally-sourced, all-natural ice cream. She and her husband, Stuart Phillips, settled in Eugene, where they started Red Wagon Creamery as a food cart. After two years, they opened a scoop shop, and now, after four years, supply five shops and sell pints to nearly 100 stores throughout the Pacific Northwest. Every flavor is made from scratch, pasteurizing their own base mix from fresh, local milk and cream. In the past year, Red Wagon Creamery has even won praise from Alton Brown and from Saveur Magazine’s website.
